Does anyone know of a good source for a replacement stock for an old-school Remington 1100 12-gauge shotgun?

I assume you have already tried Remington directly. Try doing a search for custom stock makers. Alot of them for the right price will do any stock you want. If you want something off the shelf try Midway USA or Brownells. Midway is strictly a gun supplies specialiast and Brownells is the meca for gunsmiths specializing in parts of all eras.

The world is filthy with 1100 factory wood and plastic, many of those guns have been modified to look like SWAT guns or with some other kind of aftermarket stock.
If you go the used route, make sure it's from the right 1100.
For instance, a stock from an 1100 special lightweight field in 20ga wouldn't fit an express model 1100 12ga hunter.
For the most part, any 12ga stock's gonna fit another 12ga gun as long as they're both 1100s.
Look out for short stocks though, too short a length of pull can make handling it a bitch and a half, too long and you're not going to be able to handle it very well either.
I'd err to the side of too long (factory wood from an adult sized 1100 is a good start) and cut if necessary.
